Christmas at the Funks!

Well, as I had mentioned, Kevin is working today, Christmas Day. So we celebrated yesterday. I cooked for 3 days, more if you count all the desserts!


Here are some pics form our day, we had some friends join us so I didn't have to take pics! I still have left overs if anyone is hungry!

From our House to Yours, Merry Christmas

Life has been a little CRAZY around here, but we want to wish all you a VERY Merry Christmas! Doc is working Sunday, 24 hr shift, so we are celebrating Saturday.

I've been cooking up a storm. We will have a big feast ~ Prime Rib, Turkey Breast, Ham, Green Bean Casserole, Twice Baked Potatoes, Salad, Fruit, Dressing, Sweet Potatoes, Mashed Potatoes, Cheese Pies, Pecan Pies, Fudge, Pumpkin Pie, and assorted cookies! Oh, I forgot the Chex Mix and Puppy Chow!

Holly Cookies -



One of my Christmas Traditions is Holly Cookies.  They are incredibly easy to make, just need a helper.  They are beautiful looking and taste yummy!  Below is the link to my orginal blog about them, but I'm going to add some new pics!





Melt 1 stick butter, 30 large marshmallows



Sorry, forgot butter in pic!
When marshmallows melted, add 1/2 - 1 tsp Vanilla, stir, then add Green food coloring to your liking.

My makeshift double boiler!
Stir in 4 Cups of Cornflakes.   (pictures show a double batch!)

Stir gently to cover all flakes with mixture.
Use 2 teaspoons to drop clusters onto WAX paper.  Put 3 red hots on each cluster.  good job for a kiddo!

I keep a glass of warm water to dip spoons into between spoonfulls.  Keeps them from getting sticky!
