Alsatian Onion Pie

This may sound weird, but it is yummy.  I remember it from when I was a teen, and I hated onions!!  If I liked it then, you can be sure it is GOOD!

1 1/2 pounds peeled onions
3 strips bacon
2 eggs
1/2 Cup milk
1 Tblsp flour
1 tsp salt
1/4 - 1/2 tsp nutmeg
1 Tbsp sugar
1 uncooked pie crust of your choice

In large skillet saute 3 strips of bacon diced, and peeled sliced onions. Do Not cook onions completely. Set mixture aside to cool.

In small bowl mix 2 eggs, 1/2 cup milk, 1 Tblsp flour, beat lightly. Stir into cooled onion mixture. Season with 1 tblsp of Sugar, 1 tsp salt, and 1/4 - 1/2 tsp nutmeg. Stir well.

Line a 9" pie plate with your favorite pie cruse dough - uncooked-

Fill pie shell with filling.

Bake 425-450 unill shell is cooked and custard set and surface has a healthy golden hue, about 20-25 mins. Let stand about 5 men then cut into wedges.
